We eat less than 1% of plants that are edible
Experts estimate there are over 350,000 plant species. Of these, around 80,000 species have some part – seeds, leaves or roots – that humans could eat. But only 7,000 of these species are ever eaten. Why so few? Farmers can make the most money growing just one kind of crop, such as maize or wheat. This takes less equipment and less know-how than trying to grow a variety of crops.
